Røde Claus and the common thread
Behind both Le Grand Rouge and our little brother, Le Petit Rouge, is Claus “Red Claus” Christensen – a distinctive figure on Copenhagen’s food scene and a true guarantor of flavour, solid craftsmanship, and classic culinary values.
Drawing inspiration from Parisian brasseries and the rustic cuisine of southern France, he has created a menu that features both familiar favourites and more playful dishes – all firmly rooted in classic French cooking. Think hand-cut steak tartare, crispy fries, fish with southern French garnishes, chèvre chaud, or juicy rotisserie chicken – and of course the eternal classic: veal ribeye with herb butter. And for dessert, crème brûlée and profiteroles – naturally.
With us, it’s not about impressing with pomp and grandeur – but about offering an honest, sensory, and relaxed dining experience rooted in the French country kitchen and the best seasonal ingredients.
